Edwards2023 Matilda Cabernet Sauvignon

Description

Powerful perfume of cassis, dark chocolate, red earth and light toasty oak. The wine is beautifully poised and elegant on the palate, with sweet blackcurrant fruit, dusty ripe tannins, and great length. Very approachable style to drink early, this cabernet sauvignon will cellar well for many years. The cabernet sauvignon was harvested at optimum ripeness on 12 April and immediately crushed to a static fermenter and inoculated. The ferment was pumped over for a period of 10 days to extract maximum colour, tannin, and flavour from the skins days until the ferment was dry. The wine underwent malolactic fermentation during primary fermentation and was pressed to a combination of 25% new and 75% seasoned French oak. The wine was matured in this oak for a period of 14 months. The wine was then racked to tank, filtered then bottled in July 2024.
